Pastries “Baskets” with Custard and Berries

Delicious, tender shortbread dough that melts in your mouth, and custard, cooked without problems – these are wonderful baskets (tartlets). And do not forget your favorite berry, we have black raspberries today! I recommend this recipe, magically delicious!

Ingredients

  • For the dough:
  • Flour – 225 g
  • Powdered sugar – 50 g
  • Butter – 125 g
  • Yolk – 1 pc.
  • Salt – 1 pinch
  • Vanilla extract – a few drops

  • For the custard:
  • Milk – 300 ml
  • Yolk – 3 pcs.
  • Sugar – 80 g
  • Corn starch – 3 tbsp
  • Butter – 50 g
    *
  • For decoration:
  • Black raspberries (or other berries)
  • Powdered sugar

Directions

  1. Let’s start with shortcrust pastry. Let’s prepare the food, and put the water (2 tablespoons) in the refrigerator, we need ice cold.
  2. Mix flour with icing sugar and a pinch of salt. Rub cold oil on a coarse grater. Add vanilla extract. (If using vanillin, then add it on the tip of a knife, do not overdo it, otherwise the baked goods will taste bitter.)
  3. Grind everything into crumbs, add the yolk and cold water. We don’t knead the dough, just put it in a ball and put it in the refrigerator for 30-60 minutes (this dough can be stored in the freezer for a long time).
  4. The dough has settled down (cooled down) – pinch off small pieces of dough and roll out to a thickness of 2-3 mm. We cut out round blanks to the size of the basket molds – they should be slightly larger than the dia of the mold itself.
  5. We spread the dough into molds, pressing it to the bottom and sides. Make sure to puncture with a fork before baking. We bake shortbread baskets until golden brown at a temperature of 200 degrees. By time – 10-15 minutes (see how your oven will handle).
  6. While the tartlets are baking, let’s do the custard.
  7. We will cook the cream in the microwave, so everything will be quick and easy! Grind the yolks with sugar and gradually add milk. Fill in the starch and stir so that there are no lumps.
  8. Now put in the microwave for 10 seconds, at the highest power. We take out, mix. And so we repeat until the custard thickens. This takes no more than 1 minute.
  9. It is important to cool the cream, I usually put the container with the cream in water and stir. Put the cold custard in hot sand baskets, two tablespoons each.
  10. We immerse berries in the cream, 5-6 pcs. Black raspberries look very impressive! Together with the cream and berries, put the tartlets in the oven for another 10 minutes.
  11. We made a very tasty dessert! Shortcrust pastry, custard and berry – beauty! Sprinkle the cakes with icing sugar before serving. Tried hot – how can you resist! Tried it cold – every time very impressive!
