Open Shortcrust Cake with Berries

Delicious pie with berries. Thin, tender, crumbly dough and a lot of filling with a slight sourness of cherry and raspberry. Simple, fast and delicious. Already a very summer taste. You can use absolutely any berries, frozen and fresh. Fragrant, delicate and completely uncomplicated. Join us!

Ingredients

For the test:

  • Butter 82.5% (chilled) – 75 g
  • Almond flour – 35 g
  • Wheat flour – 110 g (3/4 cup, 250 ml)
  • Large egg – 1/2 pc. (25 g)
  • or yolk (large egg) – 1 pc.
  • Sugar – 35 g
  • Orange (zest) – 1 pc.
  • Salt – 1 g

For filling:

  • Berries (cherries and raspberries) – 350 g
  • Corn starch – 20 g
  • Sugar – 60 g
  • Spices – 1/3 teaspoon
  • Powdered sugar (for serving, optional) – to taste

Directions

  1. Ingredients for the dough: cold butter 82% fat, flour – almond and wheat, salt, sugar and an egg. If the egg is large, you can take only the yolk. Orange zest – optional.
  2. I combine flour, salt, sugar and cold butter.
  3. I rub it into crumbs with my hands. You can do this with a blender with knives.
  4. I add orange zest (only the bright part of the peel, removed with a fine grater) and an egg (or rather, half an egg) and quickly knead the dough.
  5. It should turn out to be plastic, uniform, non-sticky.
  6. Between two sheets of parchment or Teflon rugs, I roll out the dough to a thickness of 5 mm and to the desired size.
  7. The size of my mold is 21 cm in diameter, the height is 3 cm. The dia of the dough layer is ≈ 27 cm (bottom + sides). I put the dough in the refrigerator for 1 hour.
  8. Then I put the chilled dough in a mold, cut off the excess. I level the dough and put it in the refrigerator for a while, while the filling is being prepared.
  9. I collect the dough scraps into a lump and put them in the freezer.
  10. For the filling, I will use raspberries and cherries in equal proportions, but you can take absolutely any berries, frozen or fresh. If the berries are frozen, as in my case, they need to be thrown onto a sieve to drain the juice. You will also need cornstarch, sugar and spices as desired (I have cinnamon, nutmeg, ginger). I turn on the oven to warm up to 170 degrees.
  11. I combine berries, starch, sugar and spices. I stir.
  12. The filling is ready.
  13. I spread the filling on the cooled dough, level it.
  14. On top I rub a frozen lump of dough on a coarse grater. I send it to an oven preheated to 170 degrees for 40-45 minutes.
  15. But better focus on a beautiful, golden crust. Let the cake cool completely, remove it from the mold.
  16. If you wish, you can decorate a sand cake with berries with powdered sugar and invite everyone for tea!
