Open Shortcrust Pastry Pie with Potatoes, Feta Cheese and Herbs

This incredibly fragrant and nutritious open pie is made from shortcrust pastry stuffed with potatoes in egg-sour cream filling with feta cheese and herbs.

Ingredients

For the dough:

  • Butter (chilled) – 125 g
  • Egg – 1 pc.
  • Flour – 250 g (1⅔ cup, 250 ml)
  • Salt – 1 pinch

For filling:

  • Potatoes (peeled) – 1 kg
  • Sour cream – 250 g
  • Bryndza – 200 g
  • Eggs – 4 pcs.
  • Butter – 50 g
  • Fresh herbs (dill and parsley) – 20 g
  • Green onions – 20 g
  • Salt to taste
  • Ground black pepper – to taste
  • Ground dried garlic – 1 teaspoon
  • Ground nutmeg – 1/3 teaspoon

Directions

  1. Rub the butter on a coarse grater.
  2. Add sifted flour to the butter and grind everything into crumbs.
  3. Add an egg and a pinch of salt.
  4. Knead a dough that won’t stick to your hands. If necessary, add 2-3 tablespoons of water.
    We wrap the dough in foil and place in the refrigerator for an hour.
  5. We clean the potatoes.
  6. Cut the potatoes into slices about 0.5 cm thick, you can use a slicer.
  7. Dip the potatoes in salted boiling water and cook until half cooked, 10-15 minutes – depending on the type of potato.
  8. We put the potatoes in a colander and leave the water in the glass and the potatoes cool for 20-30 minutes.
  9. Now let’s deal directly with the pie.
    We turn on the oven to heat up to 190 degrees.
  10. Roll out the dough into a circle in diameter about 10 cm larger than the form in which we will bake the cake.
  11. We spread the dough in a mold (I have a diameter of 24 cm), form high sides, prick the dough with a fork.
    We send the dough to the preheated oven for 12 minutes.
    After this time, we take out the dough from the oven and leave to cool.
  12. Preparing the filling for the cake.
    Rub the cheese on a coarse grater.
  13. Add eggs, sour cream, salt and pepper to taste. We mix.
  14. Finely chop parsley, dill and onion.
    Add greenery to the fill.
  15. The fill is ready.
  16. Melt the butter and add dried garlic and nutmeg to it.
  17. We spread a layer of potatoes on the dough, pour fragrant oil on top.
  18. Lubricate the potato layer with fill.
    We alternate layers in the same order.
  19. I got 3 layers of potatoes. Distribute the fill on top. We send the cake to bake at 180 degrees for 35 minutes.
  20. We take out the cake from the oven and let it cool for 10 minutes.
  21. Pie with potatoes, feta cheese, sour cream and herbs is ready!
