Ingredients
- 2 kg potato (s), waxy
- 4 large onion (s)
- 250 g bacon, mixed
- 3 tablespoon oil
- 9 large egg (s)
- 250 ml milk
- salt and pepper
- nutmeg
- parsley
- Gherkins)
- possibly smoked ham

- Boil the potatoes for 20 minutes, quench and peel.
- Peel and dice the onions. Dice the bacon as well. Then spread both on an oiled drip pan. Fry them in a preheated oven at 175 degrees Celsius until crispy.
- Cut the potatoes into slices and mix with the onion and bacon mixture on the dripping pan. Salt and pepper and fry for another 20 minutes.
- Mix the eggs with the milk and season with salt, pepper and nutmeg. Pour this mixture over the potatoes and let set for 15 minutes. Possibly Turn once after 5 minutes.
- Scatter some finely chopped parsley over the finished farmer`s breakfast and serve with pickled cucumbers and, if necessary, smoked ham cubes.
