Ingredients

  • 2 cans peach (s)
  • 290 g butter
  • 385 grams sugar
  • 7 egg (s)
  • 365 g flour
  • 2 teaspoons baking soda
  • 5 tablespoon milk
  • 1 packet vanilla sugar
  • 250 g mascarpone, (Italian cream cheese)
  • 250 g crème fraîche

Instructions

  1. Drain the peaches and cut in half. Grease the baking sheet. Mix 200 g butter and 175 g sugar until creamy. Stir in 4 eggs one at a time. Mix 225 g flour and baking powder and stir in briefly alternately with the milk. Spread the batter on the baking sheet.
  2. Process 140 g flour, 60 g sugar and 90 g butter into sprinkles using the dough hook of the hand mixer.
  3. Mix 3 eggs, 150 g sugar and vanilla sugar until frothy. Briefly stir in the mascarpone and creme fraiche. Spread the mascarpone cream on the dough. Spread the peaches on top. Sprinkle the streusel evenly over the top.
  4. Bake in a preheated oven at 175 degrees for approx. 40 minutes. Let cool down. If necessary, sprinkle with crystal sugar.
