Roll out the puff pastry and cut into 6 equal pieces. Peel and core the pears and cut into fine wedges.
Put the sugar and orange juice in a saucepan and let the pears simmer on a low heat for approx. 10 minutes, remove from the stove and allow to cool in a sieve, collect the juice.
In the meantime, chop the chocolate.
Place a few cooled pear slices in the center of each puff pastry slice and sprinkle with the chopped chocolate. Mix the egg yolks with 1 tablespoon of sugar and some of the pear juice. Brush the edges of the puff pastry with it and fold the puff pastry into triangles. Press the edges firmly on. Also brush the surface with the egg yolk and sprinkle some sugar over it.
Bake in an oven preheated to 200 ° C for 15-20 minutes until golden brown.
Take out of the oven, arrange on plates and dust with powdered sugar.
I always serve a vanilla sauce or ice cream with it.
