Ingredients
- 3 tablespoon peppermint, finely chopped, or other types mint
- 125 g flour, type 405
- 1 egg (s)
- 1 teaspoon olive oil
- 0.5 teaspoon ½ salt

- Mix the flour, salt, egg and olive oil, knead a dough with the dough hook of the hand mixer, add the mint and now while kneading add a teaspoon of water until the pasta dough can be kneaded well with your hands. It must not stick, otherwise add some flour again.
- Wrap the dough in cling film and let it rest in the refrigerator for 1 hour.
- Now do not roll out the dough too thinly with the pasta machine and shape it to taste. Put in boiling salted water and cook in it for 4 minutes, then drain.
- The noodles smell and taste like mint and, in my opinion, go very well with spicy dishes.
- I have a hot chicken liver pan with it.
