Ingredients

  • 4 chicken thigh (s), boned (Pollo Fino)
  • 1 medium onion (s)
  • 2 cloves garlic)
  • 3 tablespoon tomato paste
  • 4 medium potato (s)
  • 200 g rocket
  • 1 large red pepper (s)
  • 2 tomato (s)
  • 1 teaspoon paprika powder, hot pink
  • Salt and pepper, black
  • 1 sprig (s) thyme
  • 50 g parmesan, optional

Instructions

  1. Heat an empty pan and fry the Pollo Fino on the skin side, turn and fry too. Take the meat out of the pan.
  2. If too much fat has collected in the pan, pour off some fat. Then let the onion cut into strips and chopped garlic become translucent. Briefly toast the paprika powder and tomato paste. Put the Pollo Fino back in the pan. Then add diced peppers, diced potatoes, skinned, finely chopped tomatoes and a sprig of thyme. Season everything with pepper and salt and fill up with just a little water and simmer on a medium heat until the potatoes are cooked through.
  3. Cut the rocket once and fold in at the end.
  4. If you like, you can sprinkle parmesan on top.
