Pork Kharcho Soup

The kharcho soup has a sufficient number of variations not only in the post-Soviet space but even in different regions of Georgia. This is my homemade recipe – pork kharcho.

Ingredients

  • Pork – 600 g
  • Potatoes (optional) – 2-3 pcs.
  • Bulb onions – 2 pcs.
  • Rice – 100 g
  • Garlic – 1 head
  • Tomatoes – 3-4 pcs.
  • or tomato paste – 2 teaspoon
  • Vegetable oil – 30 g
  • Hops-surely seasoning – to taste
  • Red pepper – to taste
  • Salt to taste
  • Greens to taste
  • Water – 2.5 l

Directions

  1. Products for pork kharcho soup are in front of you.
  2. Wash the meat, cut into cubes about 3×3 cm. Pour cold water over the meat and let it boil. Remove meat noise as it boils. Cover with a lid and simmer over low heat for 40 minutes.
  3. Peel and wash the onions. Cut into cubes.
  4. Peel, wash, and dice the potatoes (optional, not included in the classic recipe).
  5. Rinse the rice well.
  6. When the meat is cooked, add rice, onions, and potatoes (optional). Cook for 15-20 minutes.
  7. Boil the kettle. Pour boiling water over the tomatoes for 1 minute. Then drain and cover with cold water for 5 minutes. Remove the skin. Finely chop the tomatoes with a knife or grate.
  8. Preheat a frying pan. Pour in vegetable oil. Put the tomatoes in the oil. Simmer over medium heat, stirring occasionally, for 5-7 minutes.
  9. Place the tomatoes in the soup. Season with salt and pepper. Add spices. Cook for 5 minutes.
  10. Wash and finely chop the herbs. Peel and chop the garlic finely.
  11. Add garlic and herbs to the soup. Cover the pork kharcho soup with a lid, remove it from heat. Let it brew for 15-20 minutes.
  12. Pork kharcho soup is ready.
