Ingredients

  • 90 g Maultaschen, approx. 1 piece
  • 1 onion (s)
  • 1 clove garlic
  • 0.5 ½ aubergine (s)
  • 0.5 ½ zucchini
  • 1 tomato (s)
  • 2 tablespoon sour cream
  • 1 teaspoon olive oil
  • salt and pepper
  • Herbs, e.g., thyme, oregano etc.
  • Vegetable broth

Instructions

  1. Cook the Maultasche in vegetable broth.
  2. In the meantime, cut the onion into rings and finely chop the garlic. Cut the aubergine into sticks, thinly slice the zucchini and dice the tomato.
  3. Fry the onion and garlic in the pan until the onion is translucent. Then add the zucchini and after a short time add the aubergine. Fry for about 8 minutes. If necessary, pour in a little vegetable stock every now and then and stir vigorously. Add the tomato as well.
  4. Cut the pasta into slices and fry with the vegetables. Finally, season with salt, pepper and herbs such as thyme, oregano or whatever you like and add 2 tablespoons of sour cream.
