Pudding with Orange Sauce

You will definitely need dried apricots and apples for this sunny pudding. And almonds can be replaced with any nut. This delicacy is served with orange sauce.

Ingredients

  • Dried apricots (cut into pieces) – 200 g
  • Apples (peeled and sliced) – 4 pcs.
  • Apple juice – 100 g
  • Eggs – 2 pcs.
  • Powdered sugar – 50 g + 1 tbsp
  • Flour – 6 tbsp
  • Almonds (well chopped) – 85 g
  • For the sauce:
  • Zest from 1 orange
  • Juice from 3 oranges
  • Cornstarch – 2 tbsp
  • Sugar- 2 tbsp
  • Sour cream (better cream frache) – 280 g

Directions

  1. Preheat the oven to 200 degrees. Transfer the apricots and apples to a large, deep heat-resistant dish. Add apple juice, cover and bake for 30 minutes. Remove from oven, remove lid, set aside.
  2. In a separate bowl, beat eggs with powdered sugar until fluffy. Add flour and almonds. Mix until smooth.
  3. Pour the dough over the fruit mixture, flatten the top with a spatula. Bake until golden brown, about 30 minutes. Sprinkle the finished product with icing sugar.
  4. Prepare orange sauce. Pour orange juice into a measuring glass and add water, in such an amount that the total liquid is 300 g.
  5. In a small saucepan, combine the starch, sugar, zest and a couple of tablespoons of diluted juice. Add the rest of the juice. Boil. Stir occasionally and cook over low heat for about 2 minutes. Remove from stove.
  6. Add sour cream to the orange broth, mix, pour into a sauce bowl. Serve the pudding with orange sauce.
