Pumpkin with Beef Stew, Argentinean (oven)

A delicious Argentinian pumpkin recipe – with beef and vegetable stew. Pumpkin stuffed with stew is cooked in the oven.

Ingredients

  • Medium pumpkin – 1 pc. or small pumpkin – 2 pcs.
  • Beef – 0.5 kg
  • Large onion – 1 pc.
  • Tomatoes – 3-4 pcs.
  • Bulgarian pepper – 1 pc.
  • Potatoes – 2-3 pcs.
  • Dried apricots – 100 g
  • Canned corn – 1 can
  • Garlic – 2 cloves
  • Vermouth – 1/4 cup
  • Sugar – 1 teaspoon
  • Vegetable oil
  • Ghee butter
  • Salt
  • Pepper
  • Beef broth – 1.5 cup

Directions

  1. Chop the beef and onion.
  2. Fry in a saucepan.
  3. Squeeze out 2 garlic cloves.
  4. Chop potatoes, peppers, and tomatoes.
  5. Add chopped vegetables and dried apricots to the meat in a saucepan, fry.
  6. Add beef broth, vermouth, salt, sugar, pepper. Simmer over low heat for 1.5 hours.
  7. Add corn.
  8. Cut off the top of the pumpkin, remove the seeds. Lubricate the pumpkin from the inside with ghee, salt, and pepper.
  9. We stuff the pumpkin with meat and vegetables. We bake in the oven at 160 degrees for 1 hour.

Argentinian pumpkin is ready.
