Ratatouille with Cheese

Delicious, juicy, bright ratatouille will become your favorite dish, especially if you bake vegetables with soft cheese.

Servings: 4

Ingredients

  • Eggplant – 1 pc.
  • Zucchini – 1 pc.
  • Bulgarian pepper – 2 pcs.
  • Tomato – 1-2 pcs.
  • Soft cheese (mozzarella, suluguni, feta or feta cheese) – 150 g
  • Olive oil – 30 ml
  • Garlic – 2 cloves
  • Thyme (dried) – 2-3 branches
  • Salt – 3 pinches

Directions

  1. How to make ratatouille with cheese. In a small bowl, combine the olive oil with the pressed garlic.
  2. Cut the prepared vegetables into slices, about 0.5 cm wide.
  3. Grease a baking dish with butter and garlic and place the slices of vegetables in the form, alternating with each other. Sprinkle vegetables with oil, sprinkle with salt and add a couple of dried thyme sprigs. Place the vegetable dish in an oven preheated to 180 degrees and bake the vegetables for about 20 minutes.
  4. After 20 minutes, remove the baking dish from the oven and sprinkle the baked vegetables with finely grated cheese. Bake the vegetables and cheese in the oven for about 3 minutes.
