Ratatouille with Potatoes

Ingredients

  • Zucchini – 2 pcs.
  • Eggplant – 2 pcs.
  • Tomatoes – 3 pcs.
  • Young potatoes – 3 pcs.
  • Seasonings to taste
  • Salt to taste
  • Bulgarian pepper – 1 pc.
  • Tomatoes – 1 pc.
  • Bulb onions – 1 pc.
  • Garlic – 2 cloves
  • Tomato paste – 2 tbsp
  • Vegetable oil – for frying
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare food.
  2. First of all, prepare the sauce. To do this, cut the red bell pepper into small cubes.
  3. We do the same with the tomato.
  4. In a well-heated frying pan with the addition of vegetable oil, fry the onion until golden brown.
  5. Add bell pepper to it and fry for several minutes.
  6. Next, add the tomatoes and a couple of tablespoons of tomato paste. Salt and pepper.
  7. Add garlic at the very end.
  8. At this time, we will take care of vegetables. Cut the zucchini into slices. Cut the tomatoes into medium-thick slices. We also cut the potatoes into circles. We also cut the eggplants.
  9. As soon as the sauce is ready, cool it and interrupt with a blender until smooth.
  10. Cover the bottom of the ovenproof dish with half the sauce.
  11. We spread the vegetables one after another in no particular order. Stack them as tightly as possible to each other. Add salt and your favorite seasonings on top, pour the remaining half of the sauce.
  12. Cover with foil and put the ratatouille in the oven, preheated to 200 degrees, for about an hour!
  13. Ratatouille with potatoes is ready.
