Raw Food Ceviche

Ingredients

  • 1 small head of cauliflower, finely chopped (about 2.5 cups)
  • 2 cups diced tomatoes
  • 0.5 cups finely chopped red onion
  • 1 jalapeno pepper, finely diced
  • 0.25 teaspoon sea salt
  • 0.5 cups lime juice
  • 0.25 cups chopped cilantro
  • 1 avocado, diced
  • freshly ground black pepper, to taste

Directions

  1. Combine cauliflower, tomatoes, red onion, jalapenos, salt, and lime juice in a cup.
  2. Add cilantro and let the mixture sit in the refrigerator for at least an hour.
  3. Add the avocado, season with freshly ground black pepper, and serve.
