Ingredients

  • 4 beef roulade (s), lean
  • 2 pt ham (Black Forest)
  • 3 onion (s)
  • 2 cloves garlic
  • 4 tablespoon mustard
  • 1 tablespoon tomato paste
  • 1 glass beef stock
  • 2 carrot (s)
  • Thyme and sage
  • salt and pepper
  • Flour

Instructions

  1. Dab the roulades with a paper towel and sprinkle with a little flour. Then brush with mustard. Cut 2 onions very finely or coarsely puree and distribute on the roulades. Now put the ham on top, then roll it up carefully and fix it with a toothpick or something similar.
  2. Heat the olive oil in a pan and fry the roulades vigorously. Season with pepper, salt, thyme and sage (as you feel, but not more than four sage leaves) and turn often. Then deglaze with the beef stock.
  3. Cook the carrots (cut into small pieces) and the remaining onion (diced) and everything over a low heat for a good 40 minutes. Then take out the roulades and puree the sauce (add a boiled potato if necessary, so that the sauce becomes stiff) and season with spices.
  4. There is also boiled potatoes and red cabbage.
