Ingredients
For the dough:
- 350 g whole wheat flour
- 2 teaspoons baking soda
- 30 g cocoa powder
- 150 g honey (acacia)
- 200 g butter, soft
- 1 egg (s)
For the filling:
- 500 g quark
- 250 g mascarpone
- 4 egg (s)
- 1 vanilla pod, scraped out pulp from it
- 180 g honey (acacia)
- 3 tablespoon rice flour or corn starch

- Dough:
- Put all the dough ingredients in a mixing bowl and mix well.
- Grease a springform pan, press 2/3 of the batter into the springform pan and pull up one edge. Put 1/3 of the dough aside.
- Preheat the oven to 175 °.
- Filling:
- Mix all the ingredients together. You can also separate the eggs and beat the egg whites into snow, this will make the mixture even fluffier.
- Pour the mixture into the springform pan and crumble the remaining batter over the filling.
- Bake at 175 ° for approx. 40-50 minutes. The edge shouldn`t get too dark.
