Ingredients

  • Salmon steak – 1 pc.
  • Salt and pepper to taste
  • For the aioli sauce:
  • Egg (yolk) – 1 pc.
  • Garlic – 2 cloves
  • Salt to taste
  • Vegetable oil – 100-120 g

Directions

  1. Salt and pepper the fish, grease with lemon juice, send it to marinate in the cold, I left it for an hour.
  2. Then fry the steak on both sides until golden brown, and serve with aioli sauce.

Aioli sauce:

  1. In a small bowl, thoroughly crush the garlic with coarse salt and a pinch of sugar into gruel.
  2. Add the yolk, stir, beat with a mixer, and add a teaspoon of oil every 5 seconds.
  3. When the mass begins to turn white and the emulsion process begins, the oil can be poured more boldly. You should get the most delicate sauce with a thick consistency. You can add lemon juice (1 teaspoon) and finely chopped parsley.
