Scallop and Linguine Recipe

Due to its delicate and slightly sweetish taste, scallops are used quite often in cooking, and one of the best dishes with them, as it seems to me, is the delicious linguini with scallops in a creamy sauce.

Ingredients

  • Pasta – 400-450 Grams
  • Scallops – 200-250 Grams
  • Onion – 1 Piece
  • Garlic – 2-3 Cloves
  • Cream – 1.5 Cups
  • Grated Parmesan – 1/4 Cup
  • Butter – 2 tbsp
  • Olive oil – 2 tbsp
  • Pesto sauce – 0.5 Cups
  • Fresh chopped parsley – 2 tbsp
  • Spice mixture – 2 tbsp (ground paprika, garlic powder, onion powder, ground black pepper, cayenne pepper, dried oregano, dried thyme)
  • Salt – – To taste

Instructions

  1. To begin with, we put the pasta to boil in slightly salted water. When the pasta is almost ready, but still a little undercooked, put it in a colander.
  2. While the pasta is cooking, we put a frying pan on the fire and melt the butter in it, add olive oil. Mix scallops with one tablespoon of spices, add about 0.5 teaspoons of salt. Put the scallops in oil and fry them on one side for 2-3 minutes until golden brown, then fry the same amount on the other side, transfer the finished scallops to a clean plate.
  3. Now we put the diced onion in the pan and fry it for 3-5 minutes, then add the chopped garlic. After a pleasant garlic aroma appears, pour the cream into the pan, add the pesto, the remaining spoonful of the spice mixture, and salt to taste. Mix everything and prepare the sauce for 2-3 minutes, during this time it should halve in volume. Next, put scallops and cooked pasta in the sauce, you can add a little water (in which the pasta was cooked).
  4. After 3-5 minutes, turn off the heat and add Parmesan and chopped parsley to the dish, mix everything well.
  5. Serve the dish immediately while it is hot. Bon appetit, everyone!
