Ingredients
- 12 scampi, peeled except for the tail end
- 2 tablespoon olive oil
- 2 tablespoon butter
- 4 cloves garlic, sliced lengthways
- 4 slices ginger
- 2 teaspoons lemon peel, grated
- 1 teaspoon orange peel, grated
- 1 stick cinnamon
- 1 vanilla pod (s), pulp scraped out
- sea-salt
- Pepper, freshly ground

- Heat the oil in a pan and fry the scampi in it for 2 minutes. Melt the butter in the pan. Add the garlic, ginger, cinnamon stick, vanilla, lemon and orange peel. Cook the scampi for another 2 minutes, toss well so that the flavor mixture can spread out well. Salt and pepper.
- Serve with baguette + green salad or basmati rice.
