Ingredients

  • 200 g noodles, (soba noodles, Japanese buckwheat noodles)
  • 3 tablespoon soy sauce
  • 3 tablespoon sesame oil
  • 2 tablespoon rice vinegar
  • 1 tablespoon lime (s)
  • 1 teaspoon honey
  • 2 carrot (s)
  • 0.5 ½ bunch spring onion (s)
  • 1 piece (s) ginger, the size a thumb
  • 3 tablespoon sesame or gomasio

Instructions

  1. Cut the carrots and ginger into fine julienne strips, finely chop the spring onions. Cook the pasta according to the instructions on the packet. 3 minutes before the end of boiling, add the carrots and ginger, 1 minute before the end of boiling, add the spring onions to the boiling water with the noodles. Strain everything and rinse well with cold water and then drain.
  2. Mix the soy sauce, sesame oil, rice vinegar, lime juice and honey well. Add the pasta and vegetables, sprinkle with the sesame seeds, mix everything well and let it steep for about 20 minutes. Season again to taste.
  3. Can also steep in the refrigerator overnight. Enjoy cold.
