Stewed Potatoes with Meat and Oyster Mushrooms

Stewed potatoes with meat is always a great dinner option for the whole family. And if you add oyster mushrooms and carrots, it turns out not only satisfying but also bright, aromatic, and tasty. Pieces of soft pork with mushrooms and potatoes in a rich sauce, in which it is incredibly tasty to dip the crumb of fresh bread – this dish will appeal to everyone, without exception.

Servings:

Ingredients

  • Potatoes – 500 g (4-5 pcs.)
  • Pork (pulp) – 500 g
  • Oyster mushrooms – 200 g
  • Bulb onions – 100 g (1 pc.)
  • Carrots – 140 g (1 pc.)
  • Bay leaf – 1 pc.
  • Salt – 1 teaspoon (to taste)
  • Ground black pepper – 0.1 teaspoon
  • Garlic – 2-3 cloves
  • Water (hot) – 400 ml
  • Sunflower oil – 60 ml (4 tablespoons)
  • Fresh dill – 2 branches

Directions

  1. Cut the pork into 3 cm pieces.
  2. Heat the oil in a saucepan or heavy-bottomed saucepan. Fry the pork over medium heat on all sides until golden brown, about 10 minutes.
  3. Peel, wash, and cut onions and carrots into thin strips.
  4. Add prepared vegetables to a pot of meat and sauté everything together for another 10 minutes, until the carrots are soft.
  5. Pour 100 ml of hot water over the contents of a saucepan and bring to a boil. Simmer over medium heat until the meat is tender, about 20 minutes (depending on the portion of the pork and the size of the pieces).
  6. Finished pork is easily pierced with a fork.
  7. While the meat is being cooked, coarsely chop the oyster mushrooms, cutting off the tough legs.
  8. Peel the potatoes, rinse and cut into large cubes.
  9. Add the mushrooms to the stew and vegetables.
  10. Put the potatoes there. Add salt, black pepper and bay leave. Fill with hot water until the potatoes are almost covered with liquid (I needed about 300 ml). Put on fire and after boiling simmer over low heat for 15-20 minutes, until the potatoes are cooked.
  11. At the end of cooking, add finely chopped dill and finely chopped garlic to a saucepan. Stir and turn off the heat.
  12. Stewed potatoes with meat and oyster mushrooms are ready. Let the dish brew for 10 minutes under the lid and arrange on plates.
  13. The potatoes are soft, crumbly, firm, and juicy mushrooms and hearty pork – delicious!

Such a dinner can be prepared for several days – very convenient for working chefs.
