Ingredients

  • 500 g strawberries
  • 700 g preservin suar 1: 1
  • 2 lemon (s), untreated
  • 10 lemon balm leaves
  • 1 tablespoon orange liqueur

Instructions

  1. Wash and de-flute perfect strawberries, halve large fruits. Mix with the sugar in a large saucepan, let stand overnight to pull the juice.
  2. Wash lemons with hot water. Rub off the peel from one half. Peel both fruits thickly and remove the fillets from the skins, cut into small pieces if necessary. Wash the lemon balm leaves and cut into strips.
  3. Bring the sugared strawberries, lemon fillets and zest to the boil, simmer for 3 - 4 minutes over high heat while stirring. Finally stir in the lemon balm strips and the liqueur. Pour the fruit mixture into clean jars while still hot and close with twist-off lids or preserving skin.
  4. Makes a bright red strawberry jam that is not so sweet but tastes more aromatic than strawberry pure. Use more lemon balm to taste.
