Stuffed Eggs “A la Herring Under a Fur Coat”

Eggs stuffed with beets and herring are a very simple and tasty appetizer for a festive table. Fans of the popular “Herring under a Fur Coat” salad will certainly love this simple recipe.

Cook: 1 hour

Servings: 8

Ingredients

  • Boiled eggs – 8 pcs.
  • Boiled beets – 100 g
  • Salted herring (fillet), pieces – 16 pieces
  • Mayonnaise – 2-3 tablespoons
  • Salt to taste
  • Ground black pepper – to taste
  • Greens (dill, parsley) – for decoration

Directions

  1. Boil eggs and beets, cool and peel.
    (For the photo, I put eggs and beets in one plate and regretted it – the eggs instantly turned beet color. Don’t make the same mistake, keep boiled eggs and beets separately.)
  2. Cut the eggs into halves, remove the yolks and put them in a separate bowl, and leave the halves of the whites intact.
  3. Grate the beets on a fine grater, add to the yolks, mash everything together with a fork.
  4. Salt a little, pepper, add mayonnaise, mix well.
  5. Fill the egg whites with the beetroot filling. (Not all of the beetroot filling will go away, use the rest as you like – for example, serve on croutons.) Lay a
    piece of herring on top. Eggs stuffed with beets and herring, garnish with herbs.
