Sweet Pepper “Boats” with Minced Meat, Rice and Tomatoes (in the Oven)

Bell pepper “boats” stuffed with meat, rice and tomatoes, baked under a cheese crust – an original and nutritious dish, a great option for a weekend lunch. Boil the rice, knead the minced meat, fill the pepper with the filling, sprinkle with cheese and bake in the oven. Thanks to the tomatoes, the filling is juicy, and the melted cheese gives the dish an appetizing look.

Ingredients

  • Bulgarian pepper – 3 pcs. (300-350 g)
  • Minced meat (pork and beef) – 250 g
  • Round rice – 60 g
  • Tomatoes – 3 pcs. (100-120 g)
  • Hard cheese – 50-60 g
  • Vegetable oil – 40 g
  • Sour cream – 100 g
  • Fresh parsley – a couple of sprigs (5 g)
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare all ingredients. Minced meat can be mixed, such as pork and beef.
  2. Rinse the rice. Boil 0.5 liters of water, add a little salt and add rice. Stir and simmer at a low boil for 15-20 minutes, until cooked through. Then drain the water, cool the rice.
  3. Rinse the tomatoes, cut them into halves. Grate the tomato halves. You will get a clean pulp without a skin. The remaining peel in your hand is not needed.
  4. Combine boiled rice, minced meat and tomato pulp in a bowl.
  5. Wash the parsley, dry and chop finely. Stir the filling, season with salt and pepper to taste. Add chopped parsley and stir again. The filling is ready. Preheat oven to 180 degrees.
  6. Rinse the bell peppers, cut in half lengthwise, remove the seeds. Grease the pepper halves inside with vegetable oil and salt a little.
  7. Stuff the peppers, laying out the filling with a slide.
  8. Brush a baking dish with vegetable oil. (The mold can be covered with foil and only then greased with vegetable oil.) Put the peppers in a baking dish, brush the top of the filling with sour cream.
  9. Grate hard cheese on a fine grater.
  10. Sprinkle the stuffed pepper halves with cheese.
  11. Bake bell peppers with minced meat, rice and tomatoes in the oven at 180 degrees for 35-40 minutes. The dish is made with a brown cheese crust and juicy minced meat.
  12. Serve hot bell pepper boats with minced meat, rice and tomatoes.
