- 200 g sheep cheese
- 8 tablespoon olive oil, good
- 3 tablespoon balsamic vinegar, good darker
- 1 tablespoon basil, chopped
- Herbal salt (organic)
- sugar
- Black pepper to taste

- Eight tomatoes, then cut in half across. Halve the shallots, cut into half rings and add to the tomatoes. Divide between four bowls or plates. Season with herb salt and a pinch of sugar. Mix the olive oil and balsamic vinegar and drizzle over the tomatoes. Crumble the sheep`s cheese and sprinkle with the basil over the tomatoes.
- It goes well with baguette or ciabatta.
