Ingredients

  • 300 g poultry meat
  • 1 piece (s) ginger, the size a walnut
  • 0.5 ½ shallot (s)
  • 5 sprigs coriander (optional spring onions)
  • Chili sauce
  • 1 pinch (s) salt
  • 1 egg yolk
  • 1 teaspoon, heaped cornstarch

Instructions

  1. For the tsukune, preheat the deep fryer to around 180 degrees.
  2. Chop the chicken breast fillet very finely. Peel the shallot and ginger and also chop very finely. Put in a bowl with the chopped coriander and knead well with salt and starch.
  3. Tip: If you don`t buy your minced chicken from the butcher, but chop it yourself, it`s best to add an egg yolk.
  4. Now shape the minced meat mixture around wooden skewers and place in the deep fryer for about 4 to 5 minutes.
  5. You can spread the fried tsukune with chili sauce. This gives them great flavor and a nice shine.
  6. The Japanese serve soy sauce with egg yolk.
