Ingredients

  • 2 bulbs garlic
  • 1 bottle olive oil
  • 8 medium potato (s)
  • 4 large beefsteak tomato (s)
  • 2 large vegetable onions
  • 8 large mushrooms
  • 4 ears corn
  • 1 zucchini
  • 1 tablespoon salt
  • 1 bunch herbs, fresh, mixed

Instructions

  1. Wash or peel the potatoes and cut in half. Wash the beefsteak tomatoes and cut in half. Peel and quarter the vegetable onions. Clean the mushrooms and the corn on the cob. Wash the zucchini and cut into thick slices. Please do not pre-cook any of these!
  2. Arrange all of these ingredients side by side on a baking sheet. Crush a garlic bulb with the garlic press and mix with three quarters of the olive oil and the tablespoon of salt in a bowl. Then distribute evenly over the vegetables.
  3. Place in the preheated oven at 220 ° C for about 30 minutes.
  4. In the meantime, clean the herbs, chop them up and mix with the second pressed garlic bulb and the rest of the oil. After the 30 minutes, pour the herb mixture over the vegetables and finish cooking for another 10 minutes at the same temperature.
