Prepare all the ingredients you need in the process.
First, prepare the yeast dough: dissolve the dry yeast in warm milk. Let them come up. Then add sifted flour to the dough – two-thirds of a glass. Add the egg, mix everything. Then sift the remaining flour on top of the dough (a glass with a third). But don’t stir! Just leave the flour on top.
Cover the bowl with plastic wrap and let rise in a warm place. Then remove the film. You will notice how the yeast bubbles around the edges of the dough, this is normal. Add brown sugar.

Then add the vanilla extract.
Stir the dough well with a mixer, add melted butter. The dough sticks strongly to your hands, don’t be surprised, it should be so.
Knead the dough and, lightly dusting with flour, cover the bowl again with cling film. Let the dough rise at a warm temperature. The dough should come up for a long time, 3-4 hours. Therefore, it is better to make the dough for waffles in the evening, because then the dough must be put in the refrigerator for half an hour, but you can leave it overnight. And in the morning you can make waffles.
Remove the dough from the refrigerator, add pearl sugar to it, stir by hand to distribute the sugar evenly.
Divide the dough into 6 portions, wrap them in plastic wrap, let it brew for an hour and a half.
As you will notice, during these one and a half hours the yeast began to work again: the dough rose and “airy” grooves appeared on it.
Preheat the waffle iron to 175 degrees, you can oil it lightly. Cook waffles for 3-4 minutes …
… until they turn rosy.
You can serve ready-made Viennese waffles in a waffle iron with jam, syrup, condensed milk, berries or nuts, sprinkled with grated chocolate.
