Ingredients

  • 1 kg melon (s), pulp (net weight) which (watermelon)
  • 2 chilli pepper (s)
  • 2 teaspoons curry powder
  • 25 g iner
  • 1 medium onion (s)
  • 1 dash honey
  • 1 small Can (s) tomato (s), chunky
  • 1 tablespoon lemon peel
  • 3 tablespoon lemon juice
  • 2 cloves garlic)
  • some stalks parsley
  • some oil

Instructions

  1. Finely dice the onion, chilli peppers and ginger. Cut the garlic into thin slices. Braise everything in a saucepan with hot oil.
  2. Do not dice the melon meat too finely (about 1 cm cubes) and sauté for 3 minutes. Season with salt, curry powder and a strong dash of honey. Add tomatoes, lemon zest and juice and simmer for 10 minutes over a medium heat without the lid. Chop the parsley and mix in.
  3. Fill hot into jars with screw caps.
  4. Long shelf life in the refrigerator.
