Zucchini Casserole with Minced Chicken and Rice

I will share today a recipe for zucchini casserole with minced chicken and rice. Such a casserole is prepared from the simplest ingredients easily and simply, it turns out juicy, aromatic, and satisfying. Such a delicious lunch will be enjoyed by all family members.

Ingredients

  • Zucchini – 450 g (1 pcs.)
  • Minced chicken (fillet) – 400 g
  • Boiled rice until half cooked – 200 g
  • Eggs – 2 pcs.
  • Hard cheese – 100 g
  • Onions – 50 g
  • Garlic – 1-2 cloves
  • Parsley greens – 0.5 bunch
  • Dill greens – 0.5 bunch
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – for lubricating the mold

Directions

  1. Boil the rice until half cooked (10-12 minutes).
  2. We rub the zucchini on a coarse grater and let it stand to let the juice flow. Chop the onion and garlic. Grind the greens.
  3. We turn on the oven to heat up to 200 degrees. Put the minced meat, rice, zucchini squeezed out of the liquid, eggs, finely chopped onion, and garlic in a container. Add chopped greens. Salt the mass, pepper, and mix thoroughly. Grease the baking dish with vegetable oil.
  4. We spread the prepared mass for baking into the form. We level. We send it to an oven preheated to 200 degrees for about 30-40 minutes. Rub the cheese on a coarse grater.
  5. Sprinkle with grated cheese 15 minutes before the end of baking so that a golden-brown crust forms.
  6. Zucchini casserole with minced chicken and rice is ready. All good!
