Ingredients
- 1 kg pork neck
- salt
- 20 g butter
- Pepper, black
- 60 g clarified butter
- 2 onions)
- 4 apples, (Boskop)
- 1 pinch (s) cinnamon
- 1 pinch (s) clove powder

- Clean the meat, pat dry and rub with salt and pepper.
- Heat the clarified butter in a roaster and fry the meat on all sides. Add some hot water. Simmer in a closed saucepan for approx. 90 minutes over medium heat, pouring the meat stock over and over again.
- Cut the onions into rings and peel, core and quarter the apples.
- 10 minutes before the end of the roasting time, add the onions and apples to roast. Add cinnamon and cloves.
- Remove the roast and keep it warm.
- Add the butter to the stock and let the onions and apples turn golden brown.
- Cut the roast into slices and serve with onions and apples.
- I recommend boiled potatoes as a side dish
