Instructions

  1. Remove the peel and stone from the avocado and puree the pulp in a blender using a hand mixer. Add the salt and eggs and whisk everything well until you have a smooth, homogeneous mass. Put this in a medium-sized pan and let it set over medium heat for about 8 minutes.
  2. The addition of fat is not necessary, the fat of the avocado is completely sufficient.
  3. If the surface of the omelette is no longer liquid, turn it over with a spatula and let it set for another 3 minutes.
  4. Spread the omelette with applesauce or herb quark, for example, or simply enjoy it pure.
