Ingredients

  • 4 bell pepper (s), colorful mix
  • 1 small onion (s)
  • 1 carrot (s)
  • 1 bunch parsley
  • 200 g feta cheese
  • 2 tablespoon oil, for frying
  • Herbs, (herbs Provence)
  • salt

Instructions

  1. Clean the bell peppers, onion, and carrot. Chop them into bite-sized pieces.
  2. Heat 2 tablespoons of oil in a large pan over medium-high heat.
  3. Add the onion and fry for 3-4 minutes until translucent.
  4. Add the carrot and fry for 3 minutes.
  5. Add the bell peppers and fry for 4-6 minutes until softened.
  6. Dice the feta cheese and stir it into the vegetables. Fry for 2-3 minutes.
  7. Chop the parsley into small pieces and sprinkle it over the pan.
  8. Season with herbs de Provence and salt to taste.
  9. Serve warm with a baguette.
