These sandwiches should appeal not only to eggplant lovers, but the taste of cheeseburgers with vegetables will also be appreciated by those who do not eat meat. The ingredients – eggplant, tomato, garlic, soft curd cheese – are practically classics, often found in French or Italian cookbooks.
Ingredients
Buns (corn) – 3 pcs.
Eggplant – 2 pcs.
Tomatoes – 2 pcs.
Curd cheese – 300 g
Wheat flour – 3 tbsp
Vegetable oil – 2-3 tbsp
Garlic – 1 clove
Salt to taste
Ground black pepper – to taste
Directions
Prepare the ingredients for your eggplant, tomato, and cheese sandwiches. Wash and dry vegetables.
Cut the eggplants into 0.5 cm thick slices and season with salt.
Dip each eggplant slice in flour, fry in a little vegetable oil.
Place the sautéed eggplant on a paper towel to absorb any excess oil.
Cut the buns in half and dry the inside in a preheated pan until crisp.
Rub each bun half with garlic.
Spread generously with soft cheese on both halves of the bun, place a few slices of fried eggplant on one, season with salt and pepper to taste.
Place the sliced tomatoes on top of the eggplants.
Cover the vegetables with the other half of the bun and serve immediately.
Delicious sandwiches with eggplant, tomatoes, garlic, and soft cheese are ready. They are great as a wine snack.
