Cheesecake with Vegetables

Everyone’s favorite cheesecake can be more than just a sweet dessert. If you’re interested in experimenting in the kitchen, make a vegetable cheesecake. The cheesecake for this recipe is prepared without baking.

Cook: 2 hours 40 mins

Servings: 6

Ingredients

  • Cottage cheese – 300-350 g
  • Sour cream – 100 g
  • Crackers (unsweetened) – 100 g
  • Carrots – 1 pc.
  • Green peas (fresh or frozen) – 80 g
  • Green beans (fresh or frozen) – 80 g
  • Butter – 80 g
  • Boiled water at room temperature – about 80 ml
  • Instant gelatin – 1.5 teaspoon
  • Salt to taste
  • You will need a split form with a diameter of 18 cm.

Directions

  1. Boil the vegetables in salted water in advance and cool.
  2. Cut the peeled carrots and green beans into small cubes. Leave the peas intact.
  3. Grind the crackers in this way into a homogeneous crumb.
  4. Put the crumbs in a bowl, add softened butter.
  5. Rub the crumbs and butter into a homogeneous mass with your hands.
  6. Put the cookie crumbs into a split mold with a diameter of 18 cm. Tamp well with a glass with a flat bottom. Put the mold in the refrigerator for 30 minutes.
  7. Dilute gelatin with water, stir and leave for 5 minutes. Then put in a water bath so that the gelatin is completely dissolved and thickened. Cool down.
  8. Combine cottage cheese and sour cream.
  9. Using a blender, beat the cottage cheese and sour cream into a homogeneous fluffy mass. You can add a little salt to taste.
  10. Add one spoonful of gelatin to the curd mass, stirring well each time.
  11. Set aside 3-4 tablespoon. tablespoons of curd mass. Stir in chopped beans, carrots, and peas into the rest.
  12. Put the curd mass with vegetables in a mold on a base of crackers.
  13. Spread the curd mass evenly on top without vegetables. Tap the mold lightly on the table to remove air. Place the cheesecake pan in the refrigerator to set for 2 hours or more.
  14. The no-bake cheesecake snack is ready. A slice of this unusual, but very tasty, light, and tender unsweetened cheesecake is ideal for your morning coffee.
