Ingredients

  • 500 g sweet cherries or sour cherries
  • 1 lime (s)
  • 1 vanilla pod (s)
  • 250 g preservin suar, 2: 1
  • 2 tablespoon lime juice or lemon juice

Instructions

  1. Wash the cherries, remove the stalk, stone and cut into small pieces. If you don`t like pieces of fruit in the jam, you should puree the fruit.
  2. Rinse the lime with hot water and cut in half. Cut one half into slices and then into pieces. Rub the peel off the other half and squeeze out the juice. Cut the vanilla pod lengthways and scrape out the pulp. If you want, you can cut the vanilla pod into small pieces, cook it and then strain it again later.
  3. Put the cherries, grated lime zest, lime juice, lime pieces, vanilla pulp and the preserving sugar in a large saucepan. Bring to the boil, stirring occasionally, and let it simmer for 3 - 4 minutes, stirring occasionally. Make a gel test. When the jam has the desired consistency, pour it into jars that have been rinsed with hot water and turn upside down for about 10 minutes.
