Ingredients

  • 300 g wholemeal spelled flour
  • 200 g spelled flour type 630
  • 30 g flaxseed
  • 25 g chia seeds
  • 2 teaspoons, leveled salt
  • 2 teaspoons, leveled baking malt
  • 1 pinch caraway seeds
  • 1 pinch bread spice mix, if required
  • 21 g yeast, fresh
  • 320 ml water, lukewarm

Instructions

  1. Put all dry ingredients in a mixing bowl and mix together. Dissolve the yeast in the water while stirring and add. Immediately knead the dough well for about 5 minutes with the mixer (dough hook).
  2. Then form dough pieces of the same size (9 pieces) from the mixture and shape them into rolls on a lightly floured work surface (so that they won`t be flatbreads later, please google “round rolls” or “fold rolls”). Then flour the underside very thinly and place on a baking sheet lined with baking paper. Let rest there for 30-60 minutes.
  3. Preheat the gas oven to 240 ° C for 2 minutes.
  4. Meanwhile, turn the dough pieces (gives a nice crust). Slide in the baking sheet in the middle and bake the rolls for 10 minutes. Then reduce the temperature to 185 ° C and bake the rolls for another 30 minutes. Then slide in the tray at the bottom and use the grill function to brown the rolls until the desired color.
  5. These full-fledged rolls still taste delicious on the third day!
