Ingredients

  • 4 turkey schnitzel, from the fillet
  • 4 slices cheese, e.g., old Gouda, Tilsiter, Emmentaler
  • 4 slices cooked ham
  • 1 large egg (s)
  • some flour
  • some breadcrumbs
  • salt and pepper
  • Lard

Instructions

  1. Cover the schnitzel with some cling film and plate with the meat mallet.
  2. Put some flour in a deep plate. Put the breadcrumbs in another plate. Beat the egg in a third plate, whisk and season with salt and pepper.
  3. Cover the schnitzel lengthways with a slice of ham and cheese and fold up. Fix with roulade needles or toothpicks. Pull the schnitzel one after the other through the flour, egg and breadcrumbs. Do not press the bread rolls too tightly.
  4. Heat the pan and let the lard get hot. Then bake the cordon bleu until golden and don`t turn too often. Finally, drain on kitchen paper, drizzle with a squirt of lemon juice and serve.
  5. It goes well with a salad and mashed potatoes.
