Ingredients

  • 4 chicken breast fillet (s), (approx. 200 g each)
  • 200 g mushrooms
  • salt and pepper
  • 2 tablespoons oil
  • 1 tablespoon butter
  • 4 slices ham, cooked
  • 100 g cheese, rated Gouda cheese, medium-aed

For the sauce:

  • 1 tablespoon butter
  • 1 tablespoon flour, heaped
  • 250 ml vegetable stock
  • 250 ml milk
  • 75 g cheese, rated Gouda cheese, medium-aed
  • 1 egg yolk

Instructions

  1. Wash the meat, pat dry and season. Fry in the hot oil for about 4-5 minutes on each side. Fillets place a greased casserole dish and place a slice of cooked ham on each fillet.
  2. Heat 1 tablespoon butter in the frying fat and fry the mushrooms in it, season with salt and pepper and spread over the fillets.
  3. For the sauce, melt the butter in the frying fat and sweat the flour in it. Pour in the stock and milk while stirring and simmer for about 3 minutes. Add the cheese and let it melt. Season to taste with salt and pepper. Mix the egg yolks and a little sauce and stir into the rest of the sauce (do not let it boil anymore). Pour the sauce over the fillets and sprinkle with the rest of the grated cheese. Bake in the oven under the grill or over high heat until the casserole is golden brown.
