Ingredients

  • 300 g couscous, instant
  • 4 spring onion (s), preferably only the green one
  • some mint leaves
  • 160 g apricot (s), alternatively soft apricots from the ba
  • 100 g raisins
  • 100 g pine nuts

For the marinade:

  • 10 tablespoon olive oil
  • 8 tablespoon lemon juice
  • 1 pinch (s) pepper
  • 1 pinch (s) salt
  • 1 chilli pepper (s)
  • 1 pinch (s) cardamom
  • 1 pinch (s) clove powder
  • 1 pinch (s) cinnamon powder
  • 4 tablespoon honey, possibly more

Instructions

  1. Prepare the couscous according to the instructions so that it is nice and loose.
  2. For the marinade the olive oil, lemon juice, salt, pepper and the chilli chopped into tiny pieces (if you are not so brave, only use 1/2 pod or less!), Salt, pepper, cardamom, clove, cinnamon and honey Stir into a creamy marinade. Definitely taste it, rather use a little more spices than too little! It has to taste really tasty and spicy.
  3. Cut the apricots into small pieces, add to the couscous with the raisins and marinade and stir. Let it steep for several hours if possible. Then the raisins swell and the couscous draws in the aroma of the marinade. But 1 hour is enough.
  4. Roast the pine nuts in a pan. Cut the spring onions into small rings. Pick the mint. Save some leaves for decoration.
  5. Just before serving, stir the pine nuts, spring onions and mint into the couscous and then decorate with whole mint leaves.
  6. Goes well with grilled food or as a souvenir at parties.
