Ingredients

  • 0.25 ¼ cucumber (s)
  • 0.5 teaspoon ½ salt
  • 125 g soy yohurt (yohurt alternative), unsweetened
  • 0.5 piece ½ (s) onion (s), finely chopped
  • 0.5 tablespoon ½ lemon juice
  • 0.25 teaspoon ¼ coriander powder
  • 0.33 bunch coriander greens, chopped

Instructions

  1. Wash the cucumber and chop very finely, unpeeled.
  2. If you want, you can mix them with the salt and let the water soak for 30 minutes and then pour off the resulting water. But you don`t have to.
  3. Mix the cucumber pieces with all the other ingredients and let them steep for at least 20 minutes.
  4. I`ve already eaten the raita with chickpea and zucchini hash browns and for grilling.
