Cupcake with Apples and Oatmeal

Cooking homemade apple and crunchy oat crumbs! Such a cupcake will be a real boon for lovers of apple baking. A sprinkle of caramelized oatmeal gives the cake a distinctive flavor and makes it unlike any other apple muffins!

Ingredients

  • Flour – 190 g
  • Butter – 100 g
  • Sugar – 130 g
  • Egg – 1 pc.
  • Milk – 80 g
  • Vanillin – 1 pinch
  • Baking powder – 5 g
    *

For the apple layer:

  • Apples (large) – 2 pcs. (500 g)
  • Butter – 20 g
  • Ground cinnamon (optional) – 0.5 teaspoon
    *

For oat crumbs:

  • Oatmeal flakes – 50 g
  • Sugar – 50 g
  • Butter – 50 g
  • Ground cinnamon (optional) – 0.5 teaspoon

Directions

  1. Prepare all the ingredients you need to make the apple muffin.
  2. Peel and core the apples. Cut prepared apples into cubes.
  3. Melt a piece of butter in a skillet. Place apples in melted butter and fry them for about a minute. The apple slices should not turn into mashed potatoes, they should become a little softer, as it were. To taste, the fried apples can be sprinkled with cinnamon, I did not add cinnamon.
    Transfer the apples to a bowl.
  4. Add more butter to the same pan, melt it, add sugar and dry oatmeal. If desired, you can also add ground cinnamon to oat crumbs, I did not add.
  5. Fry everything together until caramelized, about 3-4 minutes.
  6. Pour the toasted oatmeal from the pan into a bowl, just like the apples. Leave the apples and oatmeal to cool.
  7. Once the apples and cereal have cooled down, start making the muffin dough. To do this, combine soft butter with sugar and vanilla and beat for about a minute with a mixer. Add an egg to the resulting oil mixture.
  8. Whisk again until smooth. Turn the oven 180 degrees to heat up.
  9. Sift flour with baking powder. Pour flour and milk alternately into the butter base, knead to a smooth, smooth muffin dough.
  10. Line a rectangular muffin tin with baking parchment. Place the dough in the prepared dish.
  11. Put the cooled apples on the dough, after draining the liquid from them.
  12. Put the oat crumbs on top of the apples and bake in the preheated oven for 50-60 minutes.
  13. Remove the finished cake with apples from the mold and let it cool completely on the wire rack.
  14. Cupcake with apples and caramelized oatmeal is ready. Chop it up and serve.
