Ingredients

  • 15 fig (s), blue, ripe
  • 6 tablespoon balsamic vinegar
  • 4 tablespoon mustard seeds
  • 1 small Glass Dijon mustard
  • 2 tablespoon preserving sugar, : 1

Instructions

  1. Remove the hard stems from the figs and mash them in a saucepan with a pestle. Simmer the mustard seeds with 4 tablespoons of balsamic vinegar in a saucepan for 5 minutes and then let rest (swell) for another 10 minutes.
  2. Process this warm mass in a multi-chopper or mixer to a homogeneous mass and add to the mashed figs. Add the preserving sugar and the rest of the balsamic vinegar to the pot and use a hand blender to make a pulp. Bring this porridge to a boil in a large saucepan. Stir constantly during these 5 minutes and IMPORTANT! work with a splash guard. Use a filling aid to fill the provided small glasses, close, turn over and allow to cool.
