Ingredients

  • 1 packet puff pastry
  • 1 eggplant (s), cut into cubes
  • 1 zucchini, cut into cubes
  • 1 red pepper (s), cut into cubes
  • 3 egg (s)
  • 150 ml cream or milk
  • salt and pepper
  • 1 handful Bergkäse or Gruyere or Appenzeller, grated
  • 150 g cheese (oat cheese or feta cheese)
  • 1 onion (s), finely chopped, sautéed

Instructions

  1. First line the mold with the batter, then fry the onion and add it with the diced vegetables. Season the vegetables a little with salt and pepper.
  2. Now whip the eggs with the cream, fold in the mountain cheese and season with salt and pepper. Simply pour the egg, cream and cheese mix over the vegetables. Then spread a few flakes of goat cheese over the quiche.
  3. Then bake the whole thing in a preheated oven at 200 degrees until the goat cheese is slightly brown or the edge of the dough is nice and brown.
