Ingredients

For the dough:

  • 250 g flour
  • 125 g butter
  • 1 pinch (s) salt
  • 1 egg (s)
  • 1 tablespoon water

For the filling:

  • 500 g zucchini
  • 50 g pine nuts
  • 2 tablespoon olive oil
  • 1 bunch mint
  • 4 egg (s)
  • 50 g cream
  • 50 g sour cream
  • 200 g fresh oat cheese (oat roll)
  • salt and pepper

Instructions

  1. Knead the ingredients for the dough together and chill for about 30 minutes.
  2. Coarsely grate the zucchini. Roast the pine nuts in a pan until golden, then add the oil and fry the zucchini for a few minutes. Season with salt, pepper and chopped mint, remove from heat and let cool down a little. Whisk eggs, cream and sour cream and also season with salt and pepper. Add the egg mixture to the zucchini.
  3. Roll out the dough and place in a greased 28-inch springform pan, forming an approx. 3 cm high rim. Pour in the zucchini and egg mixture. Cut the goat cheese into slices and spread over the zucchini mixture.
  4. Bake at 180 ° (preheated) for approx. 30 minutes, until the mixture is firm and the surface is golden yellow.
