Ingredients

  • 500 g carrot (s)
  • 3 tablespoon olive oil
  • 0.5 ½ lemon (s), add the juice
  • 2 tablespoons mint, chopped
  • salt and pepper

Instructions

  1. Use either baby carrots or large carrots. Halve lengthways and cut into shorter strips.
  2. Heat the oil in a heavy pan and add the carrot strips. Reduce the heat and fry the carrots for approx. 15-20 minutes, turning only occasionally so that they become crispy. Mix with lemon juice, mint, salt and pepper while still warm.
  3. Let cool down to room temperature and serve.
