Garlic Cakes on Kefir (in a Pan)

Kefir cakes with garlic and parsley are a godsend for cases when bread is urgently needed for dinner. The crust soaked in spicy butter and the airy crumb – aromatic and very tasty! Cook these garlic cakes in a skillet!

Cook: 1 hour 10 minutes

Ingredients

  • Kefir – 200 ml
  • Sour cream – 50 ml
  • Wheat flour – 320 g + 50 g for dusting
  • Salt – 2/3 teaspoon
  • Sugar – 1 teaspoon
  • Soda – 2/3 teaspoon
  • Vegetable oil – 20 ml

For garlic oil:

  • Butter – 25 g
  • Olive oil – 30 ml
  • Garlic – 2-3 cloves
  • Fresh parsley – 20 g

Directions

  1. Prepare foods from the list.
    It is advisable to remove the kefir and sour cream from the refrigerator 20-30 minutes before the start of cooking so that they warm to room temperature.
  2. Sift 200 grams of wheat flour into a bowl. Add salt, baking soda and sugar. Mix well.
  3. Add kefir, sour cream and vegetable oil to the dry ingredients.
  4. Stir. Then, adding in small portions another 100-120 g of flour, knead a soft, elastic and still a little sticky dough, which can be formed into a ball.
  5. Knead the dough for 2-3 minutes. Then wrap the dough in plastic wrap and leave at room temperature for 15 minutes.
  6. Finely chop the greens. Save 1-2 pinches of herbs to garnish the flatbread before serving.
    Peel the garlic and grate it on a fine grater.
  7. Melt the butter and combine with olive oil, salt, garlic and herbs. Stir well and let the mixture sit at room temperature while making the tortillas.
  8. Sprinkle flour on the work surface and dough. Roll out the dough to a thickness of about 0.5 cm. To work with the dough (for dusting) I needed another 50 grams of wheat flour.
  9. Using a mold, glass or other improvised object, cut out circles with a diameter of 7-8 cm from the dough. Pound the remaining dough again, roll out and repeat the procedure.
  10. Heat a dry skillet over medium heat. Shake off excess flour from the tortillas. Place the tortillas in the skillet.
  11. Fry the cakes, covered, for 4 minutes on each side.
  12. Transfer the tortillas to a plate and immediately, while they are still hot, brush on both sides with fragrant butter with garlic and herbs. Repeat the process with the remaining cakes.
  13. Garlic cakes in a pan are ready. Sprinkle the remaining herbs on the tortillas and serve warm.
