Kefir Cakes with Potatoes, Carrots and Onions

An excellent recipe for simple and quick cakes in a pan. The crunchy bake of potatoes, carrots and onions makes tender and airy cakes look like pies, only in a lazy version, since the batter on kefir is simply kneaded and does not need to be rolled out. For first courses or as a snack, such cakes will fly apart at once!

Ingredients

  • For the test:
  • Flour – 230 g
  • Kefir – 300 ml
  • Eggs – 2 pcs.
  • Soda – 1/2 teaspoon
  • Salt to taste

For filling:

  • Potatoes – 200 g
  • Onions – 70 g
  • Carrots – 50 g
  • Flour – 1 tbsp
  • Salt – 1 pinch (to taste)
  • Ground black pepper – 1 pinch (to taste)
  • Vegetable oil (for frying) – 2 tbsp

Directions

  1. Prepare the required ingredients. From the specified number of products, 4 cakes will be obtained. Kefir and eggs are best taken out of the refrigerator in advance.
  2. Peel the potatoes and grate them on a coarse grater.
  3. Peel the carrots and grate them on a coarse grater. Add the grated carrots to the bowl with the potatoes.
  4. Peel the onion and cut into small cubes. Transfer the onion to the potatoes and carrots.
  5. Add flour, salt and black pepper to this.
  6. Stir in the vegetable mixture.
  7. Now prepare the dough. Pour slightly warm kefir into a bowl, add salt and soda. Stir.
  8. Break the eggs into the kefir mixture.
  9. Stir again until smooth.
  10. Measure out the required amount of flour and add it to the kefir-egg mixture.
  11. Knead to a homogeneous dough, similar in consistency to pancake dough.
  12. Start making cakes. To do this, it is better to use a small-dia pan, about 17 cm. Pour 1/2 tablespoon into the pan. tablespoons of vegetable oil and heat. Divide the potato-carrot filling visually into 4 parts (so many cakes will turn out). Place one part of the vegetable filling in the bottom of the skillet and flatten.
  13. Place a quarter of the dough on top of the vegetable layer and flatten so that the dough covers the filling.
  14. Place the lid on the skillet and cook the flatbread over medium-high heat until the surface of the dough is no longer sticky (about 4 minutes).
  15. Then turn the cake over to the other side, cover the pan with the lid again and cook the cake until golden brown on the underside (another couple of minutes).
  16. Prepare the rest of the cakes in this way.
  17. Simple and quick kefir cakes with potatoes and carrots are ready. Serve hot or warm to the table.
