Ingredients

  • 200 g beef minute steak (s)
  • 2 baguette rolls, whole grain
  • 1 bunch rocket
  • 1 spring onion (s)
  • 1 small bunch chives
  • 100 g low-fat quark
  • 100 g natural yohurt (1.5%)
  • Margarine for frying
  • salt and pepper

Instructions

  1. First prepare the curd cream for the burger so that it can permeate a bit. To do this, cut the spring onions and chives into rolls and place in a small bowl. Add the quark and yoghurt, season with salt and pepper and mix well.
  2. Now put the margarine in a (coated) pan and let it get very hot. Put the steaks in the pan and fry for about 2 minutes on each side.
  3. In the meantime, cut open the baguette rolls and brush with the quark cream. You can coat both or only half of the bun. Depending on how you like it.
  4. Place a few arugula leaves on the bottom of the baguette. Take the finished steaks out of the pan, cut them to the approximate size of the baguette and place them on top of the rocket. Season the meat with salt and pepper, cover it and serve.
